Cascara is dried coffee pulp. Considered (wrongly) as a by-product, it usually ended up in waterways or at best as fertilizer.
Since 13 January 2022, the import of Cascara is allowed in Europe, which represents a great economic opportunity and a new source of income for producers and a large number of new recipes for Baristas.
As natural coffee was historically dried on the ground, the different Cascaras had a high number of mycotoxins and pesticides.
With the improvement of processes, traceability and hygiene measures, it is now possible to import this product in compliance with European Union standards.
At Belco, we have decided to introduce you to this unique product and have selected the Cascara from the Santa Isabel farm in Guatemala with whom we work for coffee.
Coming from a farm with organic farming practices, this tasty cascara is guaranteed pesticide free.
Location
All coffees produced at Finca Santa Isabel are grown under the dense shade of a highly protected ecosystem.
Guided by his environmental preservation principles, Alex began exploring biodynamic practices to improve the health and quality of his coffees.
The result is a high-quality cascara, certified organic. To obtain it, the coffee is first dried with the skin on raised beds during the first days, and then on the patio.
After drying and a resting period, the coffee is pulped. The skin is recovered and then sieved to remove dust and small particles.
