This coffee is Demeter and biodynamic certified, based on the natural relationship between flora, fauna, and their intrinsic environmental dynamics.
Lunar phases are used to determine the planting and harvesting times, ensuring the coffee is optimally grown and fully integrated into the ecosystem.
There is no deforestation or forest pruning; the coffee trees are integrated into the Soconusco environment as if growing “wild,” but are carefully monitored to reach their full potential.
Periodically, water treated with medicinal plants from the region is applied to the coffee foliage to protect it from pests and enhance photosynthesis.

Location
Soconusco is a coffee-growing region in the state of Chiapas, southern Mexico, near the border with Guatemala. It has a long-standing coffee tradition dating back to the 19th century, making it one of the pioneering areas in Mexico. Its mountainous terrain, ranging from 600 to 1500 meters in altitude, combined with nutrient-rich volcanic soil, creates ideal conditions for specialty Arabica coffee. The subtropical humid climate, with well-defined seasons, supports the slow, even development of coffee beans. The region stands out for its biodiversity and commitment to sustainable farming. Many growers use natural shade and organic techniques to preserve the local ecosystem. Regenerative agriculture and natural fertilizers are also commonly used. This combination of natural and human factors produces coffees with complex flavor profiles, balanced acidity, and fruity or floral notes. Soconusco is internationally recognized for the authenticity and high quality of its coffee.
